chilli sauces

Its not a sauce but it's fkn Hot and real tasty !

Frigging awesome with beer but like everything in life, use in moderation or tomorrow morning will hurt.

The Inferno is crazy hot 10 out of 10 , not for the soft.

The Firebreather is really tasty and 9 out of 10 , my personal favourite.

Either will spice up your life nicely. Enjoy.

Little Tom Thumb chillis (1-1.5cm's long) home grown of course. I call them Tom Thumb referring to the good old days of Bungers!!!

Vinegar

Sugar

Raw Garlic to taste (less is more here)

Water as needed to get the right consistency

 

Blitz the begeezus out of the mix, seeds and all. No cooking. Of course variations can be made with spices etc

 

Its a pinch of piss and that way you get to destroy all mind control of family and friends with something that you created. A deeper satisfaction I reckon......

 

Oh and may the Lord have mercy on your rectum......................

I'm growing this at the moment, Carolina Reaper. It's on the right with just a couple fruit, another tiny one started. It's the insane chili you see destroying people in videos. 1.5M Scoville units. The other chilli is caysan, a regular one you get at most supermarkets. By comparison it's 40,000 scoville units.

 

No I definitely don't plan to eat the whole Reaper.. I'm keen to try out a tiny bit though! Will make a sauce with the rest..

And... Al Brown's Habanero Mustard...

 

Habanero Mustard

From: Stoked by Al Brown page 317

 

Ingredients:

¼ cup roughly chopped shallots

1 tsp roughly chopped garlic

¼ cup finely chopped coriander stem or root

3 x habanero or similar hot chillies, seeded and roughly chopped

¾ cup white wine vinegar

pinch of salt

1 Tbsp sugar

2 cups American Ball Park mustard

 

Method:

In a small saucepan, place all the ingredients except the mustard. Bring to the boil then simmer for 30 minutes until the liquid is mostly reduced. Remove from the heat, cool slightly, then puree with a wand blender to a paste.

Fold in the mustard and refrigerate until required. It makes plenty and it keeps indefinitely.

Just tried these at the Caravan & Camping show. The Inferno is HOT, but enjoyable. All their Jerky's are nice...

I get this from Coles. Empty bottle into a saucepan, add a whole 250grams butter, dab of garlic and a touch of lime juice and heat through. Chicken wings I usually start with a dry rub I make, bake in oven for about 35mins and when done I pour half the sauce on top and toss though. OMG so good

I bought these out of interest yesterday, took to a mates house. They use reaper and scorpion chilis. I've seen the 'one chip challenge' videos so was keen to see how hot they really are. Got to admit to being a bit disappointed. I mean they were hot, like hiccups hot, but bearable. We ate 2 at once the 2nd time round for a better chilli blast !
